Zucchini lasagna roll ups are a delicious alternative to traditional lasagna. They are filled with cheese and marinara sauce, rolled up in zucchini slices.

Instrukcje
- Preheat the oven to 375°F (190°C).
- Slice the zucchinis lengthwise into thin strips.
- In a bowl, mix ricotta, egg, half of the mozzarella, parmesan, Italian seasoning, salt, and pepper.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Take a zucchini slice, place a spoonful of the cheese mixture on one end, and roll it up.
- Place the rolled zucchini in the baking dish seam side down.
- Repeat until all zucchini slices are used.
- Top with remaining marinara and mozzarella cheese.
- Bake for 25-30 minutes until cheese is bubbly.
