Instrukcje

  2. In a pot, bring vegetable broth to a boil.
  3. Add quinoa and reduce heat. Cover and simmer for 15 minutes.
  4. While quinoa cooks, toss butternut squash with olive oil, salt, and pepper. Spread on a baking sheet.
  5. Roast squash in the oven for 25 minutes.
  6. In a large bowl, mix cooked quinoa, roasted squash, cranberries, kale, and walnuts.
  7. Serve warm.
