- 1 red bell pepper, diced

Instrukcje
- Rinse the quinoa under cold water.
- In a pot, heat the olive oil over medium heat.
- Add the onion and garlic; sauté until translucent.
- Add the bell pepper and cook for another 3 minutes.
- Stir in the quinoa, vegetable broth, black beans, corn, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and cover.
- Simmer for 15-20 minutes until quinoa is cooked.
- Fluff with a fork and garnish with cilantro before serving.
