  • 1 cup cooked quinoa
  • 1 cup chopped mushrooms
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 tsp sage
  • Salt and pepper to taste
  • 1 cup vegetable broth
  • 1/2 cup walnuts, chopped

Instrukcje

  1. Preheat your oven to 375°F (190°C).
  2. Remove the leaves and stem from the cauliflower.
  3. In a skillet, heat olive oil and sauté onions, garlic, and mushrooms until soft.
  4. Add cooked quinoa, walnuts, herbs, salt, and pepper to the skillet. Mix well.
  5. Stuff the cauliflower with the quinoa mixture.
  6. Place the cauliflower in a baking dish and pour vegetable broth around it.
  7. Cover with foil and bake for 45 minutes.
  8. Remove foil and bake for an additional 15 minutes.
  9. Let it cool for a few minutes before slicing.
