A delicious vegan turkey alternative for Thanksgiving.

- 1 large cauliflower
- 1 cup cooked quinoa
- 1 cup chopped mushrooms
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp thyme
- 1 tsp rosemary
- 1 tsp sage
- Salt and pepper to taste
- 1 cup vegetable broth
- 1/2 cup walnuts, chopped
Instrukcje
- Preheat your oven to 375°F (190°C).
- Remove the leaves and stem from the cauliflower.
- In a skillet, heat olive oil and sauté onions, garlic, and mushrooms until soft.
- Add cooked quinoa, walnuts, herbs, salt, and pepper to the skillet. Mix well.
- Stuff the cauliflower with the quinoa mixture.
- Place the cauliflower in a baking dish and pour vegetable broth around it.
- Cover with foil and bake for 45 minutes.
- Remove foil and bake for an additional 15 minutes.
- Let it cool for a few minutes before slicing.

- Serve with vegan gravy for extra flavor.
- Leftovers can be stored in the fridge for up to 3 days.
- Adjust herbs according to your preference.
