- 1 whole duck (5–6 lbs)
- 2 oranges, quartered
- 4 sprigs of thyme
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup chicken broth
Instrukcje
- Preheat your oven to 350°F (175°C).
- Remove the giblets from the duck and pat it dry.
- Season the duck inside and out with salt and pepper.
- Stuff the duck with orange quarters and thyme.
- Rub the outside of the duck with olive oil.
- Place the duck on a roasting rack in a roasting pan.
- Pour the chicken broth into the bottom of the pan.
- Roast the duck for about 2 hours, basting occasionally.
- Check the internal temperature; it should reach 165°F (74°C).
- Let the duck rest for 15 minutes before carving.

- Duck fat can be saved for cooking potatoes or vegetables.
