Instrukcje
- Preheat the oven to 400°F (200°C).
- Slice the delicata squashes in half lengthwise and scoop out the seeds.
- Place the squashes cut side up on a baking sheet.
- In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce to a simmer for 15 minutes.
- In a bowl, mix cooked quinoa, black beans, corn, cumin, chili powder, salt, and pepper.
- Stuff each squash half with the quinoa mixture.
- If using, sprinkle cheese on top of the stuffed squashes.
- Bake in the oven for 25-30 minutes until the squashes are tender.
