- Salt to taste

Instrukcje
- Preheat oven to 350°F (175°C).
- Rinse quinoa under cold water.
- In a saucepan, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a large bowl, combine cooked quinoa, black beans, corn, tomatoes, bell pepper, onion, cumin, chili powder, and salt.
- Transfer mixture to a baking dish.
- If using, sprinkle cheese on top.
- Bake for 25-30 minutes.
- Let cool for a few minutes before serving.
