- 1 cup quinoa
- 2 cups water
- 2 chicken breasts, grilled and sliced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup Kalamata olives, pitted
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instrukcje
- Rinse quinoa under cold water.
- In a pot, combine quinoa and water. Bring to a boil.
- Reduce heat and simmer for 15 minutes, or until water is absorbed.
- Let quinoa cool slightly, then fluff with a fork.
- In a large bowl, combine quinoa, chicken, tomatoes, cucumber, onion, feta, and olives.
- In a small bowl, whisk together olive oil, vinegar, oregano, salt, and pepper.
- Pour dressing over the bowl and mix well.
- Serve chilled or at room temperature.
