- 1/2 cup unsalted butter, softened
- 6 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 tablespoon fresh parsley, chopped
- Salt, to taste
- Pepper, to taste
- 1 lemon, halved
- 1 onion, quartered
Instrukcje
- Preheat your oven to 375°F (190°C).
- In a bowl, mix softened butter, garlic, rosemary, thyme, parsley, salt, and pepper.
- Pat the chicken dry with paper towels.
- Loosen the skin of the chicken and spread the garlic herb butter underneath.
- Rub the remaining butter mixture all over the chicken.
- Stuff the cavity with lemon halves and onion quarters.
- Place the chicken in a roasting pan.
- Roast in the preheated oven for about 1 hour and 20 minutes or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10-15 minutes before carving.
