Delicious eggplant roll-ups filled with cheese and herbs.

			- 2 large eggplants
 - 1 cup ricotta cheese
 - 1 cup mozzarella cheese, shredded
 - 1/2 cup grated Parmesan cheese
 - 1/4 cup fresh basil, chopped
 - 1/4 cup olive oil

 - Pepper to taste
 
Instrukcje
- Preheat the oven to 375°F (190°C).
 - Slice eggplants lengthwise into thin strips.
 - Brush eggplant slices with olive oil and season with salt and pepper.
 - Bake for 15 minutes until tender.
 - In a bowl, mix ricotta, mozzarella, Parmesan, and basil.
 - Spread cheese mixture on each eggplant slice.
 - Roll up the slices and place in a baking dish.
 - Bake for an additional 20 minutes until bubbly.
