- 1 whole turkey (12–15 lbs)
- 4 tablespoons olive oil
- 2 tablespoons garlic powder

- 1 tablespoon oregano
- 2 teaspoons salt

- 1 can pigeon peas
- 1 cup diced bell peppers
- 1 cup diced onions
- 1 cup corn
- 1/2 cup raisins
- 1/4 cup cilantro, chopped
- 1 tablespoon vinegar
Instrukcje
- Preheat your oven to 350°F.
- Rub the turkey with olive oil, garlic powder, onion powder, oregano, salt, and pepper.
- Place the turkey in a roasting pan and cover with foil.
- Roast the turkey for about 3 hours, removing the foil for the last 30 minutes to brown.
- In a pot, cook the rice according to package instructions.
- Add pigeon peas, bell peppers, onions, corn, raisins, cilantro, and vinegar to the rice.
- Mix well and let it cook for an additional 10 minutes.
- Once the turkey is done, let it rest for 20 minutes before carving.
- Serve the turkey with the rice mixture on the side.
