Instrukcje

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Remove from heat and let it sit for 5 minutes, then fluff with a fork.
  5. In a large bowl, combine black beans, corn, bell pepper, red onion, and cilantro.
  6. Add cooked quinoa to the bowl.
  7. In a small bowl, whisk together olive oil, lime juice, salt, and pepper.
  8. Pour dressing over salad and toss to combine.
  9. Serve chilled or at room temperature.
