These are delicious cherry bakewell tartlets made with a buttery pastry, filled with almond frangipane and topped with cherries.

  • 100g ground almonds
  • 1 tsp almond extract
  • 100g cherry jam
  • 24 glacé cherries
  • 100g icing sugar

Instrukcje

  1. Preheat your oven to 180°C (350°F).
  2. Roll out the pastry and cut it to fit a tartlet tin.
  3. Line the tin with the pastry and prick the base with a fork.
  4. Blind bake the pastry for 10 minutes.
  5. In a bowl, cream the butter and sugar together until light and fluffy.
  6. Add the eggs one at a time, mixing well after each addition.
  7. Stir in the ground almonds and almond extract.
  8. Spread cherry jam over the baked pastry base.
  9. Pour the frangipane mixture over the jam.
  10. Place a glacé cherry on top of each tartlet.
  11. Bake for 20-25 minutes until golden.
  12. Let cool and prepare icing by mixing icing sugar with water.
  13. Drizzle icing over the cooled tartlets.
