Opis
These are delicious cherry bakewell tartlets made with a buttery pastry, filled with almond frangipane and topped with cherries.

- 200g shortcrust pastry
- 100g unsalted butter
- 100g caster sugar
- 2 large eggs
- 100g ground almonds
- 1 tsp almond extract
- 100g cherry jam
- 24 glacé cherries
- 100g icing sugar
- 2–3 tsp water
Instrukcje
- Preheat your oven to 180°C (350°F).
- Roll out the pastry and cut it to fit a tartlet tin.
- Line the tin with the pastry and prick the base with a fork.
- Blind bake the pastry for 10 minutes.
- In a bowl, cream the butter and sugar together until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the ground almonds and almond extract.
- Spread cherry jam over the baked pastry base.
- Pour the frangipane mixture over the jam.
- Place a glacé cherry on top of each tartlet.
- Bake for 20-25 minutes until golden.
- Let cool and prepare icing by mixing icing sugar with water.
- Drizzle icing over the cooled tartlets.
