A healthy take on fried rice using cauliflower and shrimp.

- 1 head cauliflower, riced
- 1 cup shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 cup mixed vegetables (peas, carrots, bell peppers)
- 2 cloves garlic, minced
- 2 eggs, beaten

- 1 teaspoon sesame oil
- Salt and pepper to taste
Instrukcje
- Heat olive oil in a pan over medium heat.
- Add garlic and sauté until fragrant.
- Add shrimp and cook until pink.
- Stir in mixed vegetables and cook for 3-4 minutes.
- Add riced cauliflower and stir well.
- Push mixture to one side of the pan and pour in beaten eggs.
- Scramble eggs until cooked, then mix with the cauliflower and shrimp.
- Add soy sauce and sesame oil, mixing everything together.
- Season with salt and pepper to taste.
- Serve hot.
