- 1 avocado, sliced
- 1/4 cup chopped cilantro
Instrukcje
- Preheat your oven to 400°F (200°C).
- Peel and dice the sweet potatoes into cubes.
- Toss the sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper.
- Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes.
- While the sweet potatoes are roasting, season the chicken breasts with salt and pepper.
- Cook the chicken in a skillet over medium heat for 6-7 minutes on each side.
- Brush BBQ sauce on the chicken during the last few minutes of cooking.
- Remove chicken from heat and let it rest for a few minutes, then slice.
- In a bowl, combine roasted sweet potatoes, corn, sliced chicken, avocado, and cilantro.
- Drizzle additional BBQ sauce if desired and serve.
