Deliciously tender short ribs braised in apple cider.

- 4 lbs beef short ribs
- 2 cups apple cider
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 sprigs thyme
- Salt to taste
- Pepper to taste
- 2 tbsp olive oil
Instrukcje
- Season short ribs with salt and pepper.
- Heat olive oil in a large pot over medium heat.
- Sear short ribs on all sides until browned.
- Remove ribs and set aside.
- Add onion, garlic, carrots, and celery to the pot. Sauté until softened.
- Pour in apple cider and scrape the bottom of the pot.
- Add short ribs back to the pot with thyme.
- Bring to a simmer, cover, and cook on low for 2.5 to 3 hours.
- Check for tenderness and adjust seasoning as needed.
- Serve warm.
